non-enzymatic glycosylation (Maillard reaction)

- chronic hyperglycemia may result in non-enzymatic glycation of proteins with accumulation of AGE pigments - these AGE pigments may accumulate in extracellular proteins with slow turnover, i.e collagen - hemoglobin A1c is probably the best known example of non-enzymatic glycation.
