hydrogenation

Addition of hydrogen to a molecule. For example, addition of hydrogen to an unsaturated fatty acid resulting in a fatty acid with fewer double bonds. If the hydrogenation is partial rather than complete, isomerization about double bonds may result in trans fatty acids.
